Japanese Cultural Experiences through Kyoto Cuisine & Craftsmanship

Cha kaiseki

Participants can experience the relationship between Kyoto's food culture and traditional crafts through cha kaiseki. Cha kaiseki cuisine is the practice of serving multi-dish meals during a tea ceremony. The method incorporates the use of seasonal ingredients and flavors to serve the guests.

Kyoto food culture heavily involves Kyoto style dashi broth, a soup stock made from kombu and dried bonito flakes. Guests will learn about dashi broth culture, kaiseki cuisine and the relationship to Kyoto culture, and crafts used to entertain guests.

During the week-long event, guests can enjoy crafting workshops and culinary tours led by Kyoto artisans. Participants will have the opportunity to learn directly from Japanese artisans and learn about their craft and history.

Chef Ozasa and Chef Kimura will serve cha kaiseki prepared with local San Diego ingredients in a cha kaiseki setting. Registrants will be able to take home handmade Japanese items created just for this special event.

What’s included: Ceramic bowl (soryu gama), lacquered wooden soup bowl (tsutsumiasakichi urushi shop), kyo yuzen furoshiki (sachi manabe)
